100% Koroneiki, grown in Chile and crushed in May 2025.

FLAVOR PROFILE

Evaluated by Paul Vossen in October 2025 and rated 99, with perfect marks for complexity and balance. Strong fruitiness, both green and ripe — floral and tropical at the front, ripe banana beneath, then herbaceous green banana, nettle, and chili pepper. The bitterness lingers. The pungency is bold.

A finishing oil, not a cooking one. Grilled bread, soups, grains, roasted vegetables, aged cheese. Use it where you want the oil to be the flavor rather than the vehicle.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.

Vinegar is far more forgiving. Cupboard, cool, done.
