ORIGIN

From Puglia, Italy. A Pressato oil: the herbs are pressed together with the olives rather than infused afterwards.

FLAVOR PROFILE

Layered and aromatic. Five herbs, and you can find all of them — but they arrive as one thing, not five, because they went into the press together.

PAIRINGS

The dipping oil. Pour it into a shallow dish with cracked pepper and tear bread into it. Also excellent on roasted potatoes and grilled chicken.

Pop-up exclusive. Order ahead and collect at our next event — you will not find this one shipping out.

Every bottle is filled by hand and carries its own lot code and best-by date.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.

Vinegar is far more forgiving. Cupboard, cool, done.
