Green, herbaceous, and savory, with the richness good pesto only gets from real cheese and real nuts. Thick enough to hold its own against hot pasta.
Stir into pasta with a splash of the water. Spread on bread under sliced tomatoes. Spoon over roast chicken or white beans. Loosen it with a little Arbequina or Verde Luxe and it becomes a dressing.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.
Vinegar is far more forgiving. Cupboard, cool, done.
