Rich and velvety, yet delicate and fruity — the berry is present without ever tipping into syrup. It has body, which is what makes it work in a marinade rather than only on a salad.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.
Vinegar is far more forgiving. Cupboard, cool, done.
