HOW IT DIFFERS FROM OUR PRESSATO

Our Rosemary Pressato is milled with the olives — the herb goes into the oil rather than onto it. This one is infused. Both are good. They are not the same.

Every bottle is filled by hand and carries its own lot code and best-by date.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.

Vinegar is far more forgiving. Cupboard, cool, done.
