ORIGIN

A Pressato oil — the fruit milled together with the olives in the same press, rather than added after.

FLAVOR PROFILE

Bright and subtly sweet, with real lemon peel behind the brightness — the bitterness you only get from the whole fruit. Fuller and rounder than an infused lemon oil, because the citrus was never added to it. It was always there.

PAIRINGS

Finish grilled fish, asparagus, or artichokes. Toss with pasta, lemon zest, and nothing else. Remarkable over ricotta with honey and cracked black pepper.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.

Vinegar is far more forgiving. Cupboard, cool, done.
