Sweet, savory, and intensely tomato — the flavor tomatoes only get once the water is gone. Richer and rounder than a basil pesto, and it carries further.
Toss with short pasta. Stir into rice or white beans. Spread on a sandwich, or under cheese on toast. Whisk with a robust olive oil and a splash of Vinoso for a dressing with real weight.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.
Vinegar is far more forgiving. Cupboard, cool, done.
