ORIGIN

A barrel-aged wine vinegar from Italy. Ingredients: rectified concentrated grape must, wine vinegar, naturally occurring sulfites.

FLAVOR PROFILE

Garnet red in the glass, with a slight tannic grip on the finish. At 4.5%, its acidity is lower than most aged wine vinegars — which is exactly why it behaves so well. Rounded rather than sharp.

PAIRINGS

The vinaigrette vinegar. Combine with any of our olive oils, minced garlic, a smidgen of Dijon, and a pinch of salt — that is the whole recipe. Beyond the bowl: deglaze a pan after sautéing chicken, braise beef or pork, finish cooked greens. Use it anywhere a recipe asks for sweet-and-sour — agrodolce, in Italian.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.

Vinegar is far more forgiving. Cupboard, cool, done.
