ORIGIN

A Pressato oil — rosemary milled together with the olives in the same press, so the herb goes into the oil rather than onto it.

FLAVOR PROFILE

Piney and resinous, with the woody depth rosemary only gives when it is fresh. Savory, herbal, and more assertive than most flavored oils dare to be.

PAIRINGS

Chicken. Lamb. Pork. Roasted potatoes. Focaccia. Anything out of the oven that wants a forest in it. Also extraordinary over white beans with lemon and salt.

HOW IT DIFFERS FROM OUR INFUSED

We make rosemary oil two ways. This one is milled with the olives — the herb goes into the oil, and it is the more assertive of the pair. Our Rosemary Infused is a Spanish extra virgin with rosemary added after pressing: easier, more everyday, familiar. Both are good. They are not the same.

The infused one is a pop-up exclusive. It does not ship — find it at our table.

Every bottle is filled by hand and carries its own lot code and best-by date.

Olive oil is perishable. Keep it away from heat and light — not next to the stove, however convenient that is. Use it within about a year of opening, and sooner if you can. It does not spoil dangerously; it just quietly gets duller.

Vinegar is far more forgiving. Cupboard, cool, done.
